Cold Brew Unicorn Bars

Cold Brew Unicorn Bars made with Chameleon Cold-Brew Vanilla Coffee Concentrate.

Make your own colorful, buzzy bites with our confetti Cold Brew Unicorn Bars made with Chameleon Cold-Brew Vanilla Coffee Concentrate.

Ingredients
  • 1 cup butter, room temperature
  • 1 cup cane sugar
  • 2 large eggs
  • 1/4 cup Chameleon Cold-Brew Vanilla Coffee Concentrate
  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp sea salt
  • 1/2 cup rainbow sprinkles
  • more sprinkles and/or marshmallows for topping

Frosting

  • 8 oz (1 cup) cream cheese
  • 8 TBSP (1/2 cup) butter
  • 4-6 cups powdered sugar
  • 1 TBSP Chameleon Cold-Brew Vanilla Coffee Concentrate
  • 1/4 tsp sea salt
  • food coloring as desired
Instructions
  • Preheat oven to 350°F and line 9” x 9” pan with parchment.
  • In a stand-mixer or with electric mixer, cream butter and sugar until light and fluffy.
  • Mix in eggs and Chameleon Cold-Brew until smooth.
  • Add flour, baking powder and salt and slowly mix until just combined.
  • Stir in sprinkles by hand.
  • Spread dough evenly into prepared pan and bake for 25-30 minutes until the edges are set.
  • Remove from oven and let cool in pan.
  • Meanwhile, in a stand-mixer or with electric mixer, cream butter and cream cheese until light and very fluffy.
  • Add one cup of powdered sugar at a time until sugar is incorporated and frosting is whipped.
  • Mix in Chameleon Cold-Brew, sea salt and food coloring until combined & your ideal color is reached.
  • Pipe or spread the frosting onto cooled bars then top with more sprinkles and mini marshmallows.
