Gingersnap Cold Brew Crumb Cake made with Chameleon Cold-Brew Gingersnap Oat Milk Latte

INGREDIENTS

Crumb Topping Ingredients

  • 1 ½ cups cup all purpose flour
  • 1 cup brown sugar
  • 2 teaspoons ground ginger
  • 2 teaspoons cinnamon
  • ½ teaspoon ground allspice
  • ½ teaspoon ground cloves
  • ¼ teaspoon nutmeg
  • ¾ cup unsalted butter, softened
  • ¼ teaspoon sea salt

Cake Ingredients

  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • ½ teaspoon sea salt
  • ¾ cup cane sugar
  • ¾ cup unsalted butter, melted
  • 1 large egg
  • ½ cup Chameleon Cold-Brew Gingersnap Oat Milk Latte
  • ½ cup molasses
  • Powdered sugar, to serve

PREPARATION

  1. Preheat oven to 350°F and line a 9” baking dish with parchment paper.
  2. Make crumb topping by mixing together all topping ingredients until medium to large crumbs form. Refrigerate until ready to use.
  3. In a large bowl, whisk together cake’s flour, baking powder and sea salt.
  4. In a medium bowl, whisk together remaining ingredients.
  5. Fold together wet and dry ingredients with a spatula until just combined.
  6. Spread into prepared pan and sprinkle chilled crumb topping evenly on top.
  7. Bake 35 – 50 minutes until toothpick comes out clean.
  8. Once cool, dust with powdered sugar and serve with a mug of Chameleon Cold-Brew.

CINNAMON & CREAM CHEESE COLD BREW BITES

Cinnamon & Cream Cheese Cold Brew Bites made with Chameleon Cold-Brew Gingersnap Oat Milk Latte

INGREDIENTS

  • Vegetable oil for frying

Filling Ingredients

  • 2 oz vegan cream cheese
  • 2 tablespoons vegan butter
  • ½ teaspoon vanilla extract
  • 1 cup powdered sugar

Donut Bites

  • 2 cups all-purpose flour
  • ¼ cup cane sugar
  • 2 teaspoons baking powder
  • ½ teaspoon sea salt
  • ½ teaspoon ground cinnamon
  • ¼ cup vegan butter, cold
  • ¼ cup Chameleon Cold-Brew Black Coffee Concentrate
  • ¼ cup oat milk
  • ¼ cup apple sauce

Toppings

  • 1⁄3 cup cane sugar
  • 1 ½ teaspoon ground cinnamon

PREPARATION

  1. For filling, whip together cream cheese, butter and vanilla until fluffy then add in powdered sugar until thick and creamy.
  2. Place filling in a piping bag with a tip and refrigerate until ready to use.
  3. For donut bites, combine the flour, sugar, baking powder, salt and cinnamon in a large bowl.
  4. Cut in butter using a fork until it resembles coarse crumbs then stir in Chameleon Cold-Brew, oat milk and applesauce.
  5. On a floured surface, knead dough until it forms a ball.
  6. Rip off about 2 teaspoons of dough and roll into a ball.
  7. Once all balls have been rolled, pipe 1 – 2 teaspoons of cream cheese filling into each ball then use a little water to pinch dough closed around filling. Refrigerate until ready to fry.
  8. In a large pot, heat up about 2 – 3 inches of oil until it reaches 350°F.
  9. While waiting, mix together cinnamon and granulated sugar in a dish.
  10. Once oil is hot, use a slotted spoon to gently place 4 – 6 bites into oil then cook 1 minute, stirring occasionally until the dough is no longer gooey.
  11. Remove bites from fryer and place on a paper towel to cool 5 – 10 seconds then roll the bites in cinnamon-sugar mixture.
  12. Finish frying and rolling bites then enjoy with a glass of Chameleon Cold-Brew Gingersnap Oat Milk Latte.
